Prawn laksa.....

packet of honnekkin noodles
​1/4 cup red curry paste
​2 cups of chicken stock
​can of coconut milk
green prawns, peeled and deveined(as many as you want)
100g snow peas


​Place the noodles into bowl and pour over boiling water
​Stand for 10 minutes
​Drain well and divide between bowls

​In large pan cook the prawns until pink
combine the paste, chicken stock and coconut milk in the pan
​Bring to the boil

Add the snow peas
​Cook for another 5 minutes
​Divide the mixture between the noodle bowls


Tips:
​You can use chicken, get one from woollies already cooked, just shred and add it in.
​Add in more veges, like bean sprouts
​You could also use frozen peas instead of snow peas
​If you have left over prawns, just use those.
​I used frozen prawns

Meatballs with Bocconcini....

Meatballs about 16 small
​Olive oil
​Tub cherry tomatoes
​220g tub of Bocconcini, cut in half or quarters
tomato sauce, about 1/2 cup


​Preheat the oven to 180
​Heat the oil in the frying pan.
​Cook the meatballs until brown
​Put them into a casserole dish
​Put the tomatoes & sauce in dish & bake in oven for 10 mins.

​Put the Bocconcini in the casserole dish & bake for 5 mins, or until cheese is melted

​TIPS:
​Use a can of tinned tomatoes, instead of sauce
​I used premade meatballs from Aldi
​Serve with salad or crusty bread

​Chill the meatballs beforehand.
​

Chicken & pumpkin.....

1/3 cup plain flour
3 teaspoons garlic (jar version is what I use)
​4 chicken breasts, sliced into thin strips
​500g pumpkin, peeled & chopped into bite size
​3/4 cup of white wine
​3/4 chicken stock
​1/2 cup of cream
​1 cup frozen peas

Coat the chicken in flour, do a few at a time set on plate until all done.
​Melt butter in big frypan or wok
​Add the garlic and cook for couple of minutes
Put the chicken in and stir well
Cook until brown
​Add in the pumpkin, wine & stock

​Bring to the boil, cover and simmer for 20 minutes or until the pumpkin is cooked
​Stir the cream & peas through
​Cook for another 5 minutes or until the sauce is a little thick.

​Tips:
​Add in beans or leeks
​Instead of wine, use more chicken stock
​Serve with fresh crusty bread.

Sausage in a bun.....

8 Tiger bun (coles or woollies) cut the top off & pull out the inside
2 chorizos  cut up & cooked

8 eggs

½ cup cream

2 spring onions or normal onions  cut up

1 cup tasty cheese  grated

½ capsicum chopped up

Preheat oven to 150 degrees
Line a tray with foil and place bun on top

Cook the chorizo, onion & capsicum until brown & golden

Place into the bun, spreading evenly

Whisk the eggs & cream in a bowl

Add ½ cup cheese, give a quick stir

Pour over the chorizo etc.

Sprinkle the remaining cheese

 Bake in the oven for 30 minutes or until brown

 
TIPS:
You could use normal sausages or ones with flavour

Add or take out anything hat you don’t like or would like

The top & inside of the bread you can put in for the last 5 mins of cooking to brown......

Use individual buns.

Spanish Chicken.........

500g potatoes cut in half
​4 chicken breasts sliced in half 
​1 chorizo sliced
​1 red onion  cut into quarters
​1 brown onion cut into quarters
​Garlic  either from a jar or in clove form
​2 tablespoons lemon juice
​1 cucumber sliced

Preheat the oven to 220
​Toss the potatoes in a large roasting pan with oil
​Bake for 20 mins
​Remove from oven and add chicken, onion, cucumber, garlic and chorizo
​Stir to mix
​Return to oven for 15 mins
​Stir the mixture and add the lemon
​Return for another 10 mins or until chicken is cooked


TIPS:
 You can coat the chicken in seasoning before cooking.
​Add whatever vegetable's you have or would like.
​Add in some more herbs or flavours.

Oven Taco's

2 Chicken breast's
Taco seasoning
3/4 cup water
Can 5 bean mix, drained
Capsicum, chopped
Jar mild salsa
Packet taco shells
1 cup of grated cheese


Preheat the oven to 200
Cook the chicken in fry pan, add the taco seasoning and
3/4 cup water, simmer 10mins.
Place the bean mix, capsicum and  1/2 cup salsa into a bowl
Add the chicken and mix well.

Arrange the taco shells into an oven dish
Divide the mixture between the shells.
Add the extra salsa and the cheese on top
Bake in the oven for 20-25 mins until the cheese is melted

Serve with sour cream and avocado.

TIPS
You can use a bbq chicken
Don't have to have the beans or salsa or capsicum.

Fudge......

Can condensed milk
200g chocolate
80g butter

Put all the ingredients into microwave safe container.
Mix roughly
Put in microwave for three minutes
or
Melt in saucepan, stirring constantly until smooth

Line & spray lightly an oblong container (with a lid)

Stir the mixture really well until it is smooth looking
Pour into the lined container, spread it out.
Put the lid on & put into fridge.

It is best overnight but can take 3 hours to set.
When it is ready take out of fridge and cut to size, you could also use cookie cutters for something fun or as a gift.

Cheesecake..........

250g packet of choc ripple biscuits
60g butter, melted
250g cream cheese
1/3 cup icing sugar
1litre chocolate ice cream

Place biscuits into zip lock bag and crush until they resemble crumbs
Place biscuits into bowl and add melted butter, stirring until combined really well.
Spoon mixture into 12 hole silicone muffin tray, pressing firmly each time.
Pop into fridge for 20 mins.

I have a Tupperware container that has a lid with a hole in the middle, you could also use a food processor.


Put cream cheese and icing sugar into bowl and hand mix together until smooth.
Add the ice cream and mix until it is all blended together.
Put the mixture on top of the biscuit base.
Cover with cling wrap and freeze until firm.

When you are ready to eat, just push them from the bottom and place onto the plate.

You can put frozen or fresh fruit on top.
You can also cut up some mars bar and add it to the mixture and on top also.

I have also made this into a big cheesecake, just make sure you use a silicon base, as it's easier to get them out.

Carbonara.....

2 cups uncooked pasta

3 rashers bacon, diced
1 cup cream
1/2-1 cup of grated cheese
Masterfoods Carbonara recipe base

Boil the water for the pasta
When the water is boiled add pasta and cook until soft.

Heat oil in frypan.
Add the bacon and cook until crisp
Add in the cream, cheese & recipe mix altogether.
When the pasta is cooked add into the Carbonara mix.

You can also add in chicken, peas, onions.....

Shortbread.....

1 1/3 cups plain flour
1/3 cup sugar
150g butter, room temperature, diced

Put the flour & sugar into mixing bowl
Give a little stir
Put in the butter
Mix the butter and flour until it forms a dough around the blades.
Turn the dough onto lightly floured board and knead until smooth
Divide mixture into 2, I make mine into more of an oval shape, easier to roll later. 
Wrap each portion in cling wrap
Put in the fridge for 30-45 minutes.

 Preheat the oven to 150c.
Line baking trays with paper
Take one of the mixtures out of the fridge and unwrap
Roll between 2 sheets of baking paper until about 8mm thick
Press shape into the mixture
Place the shapes onto trays and sprinkle with extra sugar.

Then continue until all mixture is used up

Bake for 10-12 minutes or until light brown.
Remove from oven
Cool on trays, if you need the trays for next dough, then you can slide the biscuits off the tray while still on the paper.

The thicker the dough is the less likely it is to break when picking up to put on trays to cook
I have also used this as a base for caramel tart, just make sure that you have greased the dish really well & line it with paper.

Chicken Chowder.....

1 onion diced
4 rashers bacon
4-5 chicken breasts
2 carrots diced
4-5 potatoes diced
Can corn kernels
Can chicken soup
Can milk

Cook chicken until just cooked on medium heat in frypan
Add in onion and bacon and cook until chicken is brown
Add in the carrots, potato, corn, soup and milk
Mix altogether

Simmer 30 minutes or until vegetables are soft
Stir every now and then so it doesn't stick to pan.

Serve with crusty bread.
