Easy Chicken Cacciatore......

2 cups of pasta, whatever you like or have
1 onion sliced
2-3 chicken breasts cut into bite size.
1 pouch Italian Casserole recipe base,
   masterfoods brand
1 punnet cherry tomatoes
1/2 cup cream
Spring onion cut up

Heat  a saucepan of water for the pasta
when water is bubbling then add the pasta.
And cook for a couple of minutes or until soft.
Drain.

Heat oil in pan on a medium heat and add onion and cook until brown.
Add the chicken breast and cook until brown
Then add the Italian recipe base and tomatoes, simmer for 5 mins.
Stir in the cream and spring onion
Simmer for a couple of minutes.

Serve with pasta and green salad.

You can also grate some cheese and put it on top as well.

Mexican Chicken.....

2 large chicken breasts
Taco seasoning
Jar of salsa
Tin of 5 bean mix
chopped parsley or spring onion
Packet corn chips
1-1 1/2 cups grated cheese

Preheat the oven at 180C
Cook the chicken until brown
Add the taco seasoning and a cup of water
Simmer for 10 minutes

In a saucepan mix the salsa, 5 bean mix and parsley or spring onion until heated through.
Then add the chicken and mix altogether.
Pour the chicken mixture into ovenproof dish

Crush the corn chips into a bowl and mix in the cheese.
Sprinkle over the chicken mixture
Cook in the oven for 25 minutes or until lightly brown.

Serve with green salad.

Cheesy Chicken....

40g Butter
2-3 Chicken breasts, cut into bite sized pieces
Can of chicken soup
Tub of sour cream
1-2 cups of grated cheese

You can also add 250g bacon &1onion, cut into small pieces.

Heat the butter and add the chicken.
Cook until brown
Add the bacon and onion now if adding them and cook for a few minutes.
Pour in the soup, sour cream and cheese.
Stir until all mixed in.

You can either eat as is or you can make up the batter and add on top of the chicken and cook in the oven for 30 mins at 180 degrees.

Batter for top
1 cup self raising flour
2 eggs
1-2 cups grated cheese
1/2 cup milk

Sift flour in bowl
Add eggs, cheese and milk
Stir until just mixed in
Place spoonful's of batter on top of chicken.

Intro to my cooking......

I don't pretend to be a fantastic cook, I have had a few disasters.

I have had a few inquires about a couple of recipe's, so I thought that I would once a month upload a recipe that my family have enjoyed.

My first rule of cooking is it has to take 30-45 minutes to prep and cook, unless it is something that I can do in the oven or slow cooker.
Prep and forget, love those recipes

My second rule of cooking is I have to have the ingredients already in my pantry or fridge.
Or if I do buy a new ingredient it has to do a couple of recipes.

Hope you enjoy and your family loves them as well!!


Lamb Chop Bake

2 large onions, cut into wedges
1kg potatoes, cut into wedges
8 lamp chops
1 tbsp dried herbs
3/4 cup chicken stock
1 tbsp tomato sauce
1 tbsp barbecue sauce
1 tbsp worchestire sauce

Preheat the oven to 180 (mines a fan forced)
place 2 tbsp of olive oil, onions and potatoes in a BIG baking dish.
place in oven and cook for 40 mins,

Give the potatoes and onions a stir.
place chops over potatoes and onions and drizzle some more olive oil.
return to oven and cook for a further 20 mins


Combine stock and sauces and pour over the chops and give a good stir.
Cook for another 5-10 minutes
Sprinkle herbs over and serve.
